2 teaspoons butter
3/4 pound ground beef
1/4 pound ground pork
1 cup minced onions
1/2 cup minced green peppers
1 tablespoon chopped garlic
2 eggs
1/2 cup heavy cream
3/4 to 1 cup bread crumbs
Salt and fresh ground black pepper
2 cups veal stock
2 tablespoons flour
2 tablespoons water

Preheat the oven to 350 degrees F. Grease a roasting pan with the butter. In a mixing bowl, add beef, pork, onions, peppers, garlic, eggs, cream, and bread crumbs. Blend thoroughly. Season the mixture with salt and pepper. Shape the mixture into a loaf and place on the prepared pan. Pour the stock over the top and place in the oven. Place in the oven and bake for about 1 to 1 1/2 hours, basting occasionally. Remove the pan from the oven. Using a long spatula, remove the meat loaf from the pan. Place the roasting pan on the stove, over high heat. In a small bowl, whisk the flour with 2 tablespoons water. Whisk the slurry into the gravy. Bring the liquid to a boil and cook for few minutes, stirring constantly. Season the gravy with salt and pepper. Slice the meatloaf in to 8 pieces. Serve two slices of meat loaf per person with a spoonful of gravy.

I like to add a 1/4 cup of Jimmy Dean's hot and spicy sausage to the meatloaf. It gives it a little zest.

2 pounds ground beef
1 cup Jack Daniels barbecue sauce
2 cups shaved mozzarella cheese
1 cup parmesan cheese, grated
2 to 3 tablespoons minced garlic (to taste)
1 cup minced onion (to taste)
2/3 cup parsley (to taste)
½ teaspoon salt
1/8 to ¼ teaspoon black pepper (to taste)
1 to 1 ½ teaspoons crushed red pepper (to taste)
1 ½ teaspoons Italian seasoning OR oregano
3 eggs
1 cup Italian seasoned bread crumbs

Directions:
Combine all ingredients in a large bowl, blend thoroughly. Pack into a baking loaf pan. Spread a little BBQ sauce. Cover with foil and bake at 350F degrees for 45 minutes to 1 hour. Remove foil and continue baking for 15 additional minutes. Carefully remove loaf from pan and slice into ½ inch thick slices. Serve immediately.

You CAN substitute the Jack Daniels saucefor another brand if you dont have that brand there.

Damned if i can find the recipe but here's how my mom has always made it..

use your favorite meatloaf recipe, put the meat into a circular cake pan, shaping into a ring leaving the middle open

while its cooking boil potatoes to make mashed potatoes, when there is about 5 min or so left for the meat to cook you put the potatoes into the center of the meatloaf and add chees to the top.

i am not sure if you lower the temp or not but you put it back into the oven until the cheese melts...

its to die for!~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~

2 lbs ground beef
stove top stuffing mix, I prefer the herb one
beer - I don't measure just make it moist
one egg to bind
ketchup

mix ingredients, form into a ring on a baking sheet, glaze with some extra ketchup. Bake at 350 til done maybe 45 mins

sorry I don't measure or follow a recipe...you just have to kinda wing it. Very moist and the only meatloaf I actually like~~~~~~~~
